La mia melanzana sa di menta. My aubergine tastes like mint.



Vi ho già proposto la melanzana con la bruschetta e il parti di verdure, in questa occasione l'ho utilizzata per realizzare un contorno per l'agnello, di cui vi parlerò prossimamente.
Come condirla? Olio, aceto o limone, sale e MENTA. 
Anche se avete l'acquolina in bocca non mangiatela adesso, lasciatela riposare per un'ora, tempo necessario affinché tutti i sapori e i profumi si fondano.

 I've just suggest you aubergine with bruschetta and in vegetable party, but now I use it like side dish for lamb, next on this blog.
How to dress it? Oil, vinegar or lemon juice, salt and MINT.
Even it makes your mouth water don't eat now, let it rest for an hour, time is necessary to make tastes and smells mix together.

Intingolo di mare. Sea sauce.



Se vogliamo preparare un buon piatto di frutti di mare l'intingolo ha un ruolo importantissimo.
Come prepararlo?
Innanzitutto usare olio extra vergine di oliva e poi scegliete le erbe aromatiche del vostro territorio.
Per esempio, quando sono in Puglia uso le erbe della macchia mediterranea più lo zenzero, quando sono in Veneto opto per erba cipollina, aglio, alghe e scorza di lime, in Toscana gli aghi di pino marittimo. Aggiungete anche pepe o peperoncino e buccia o succo di limone. Insomma, ovunque siate, se volete preparare un buon intingolo di mare il mio consiglio è:
scegliere erbe tipiche della vostra regione
seguire il vostro gusto personale.
Domani vi farò vedere cosa ho realizzato con l'intingolo della foto.

If  we want to prepare a good seashell meal, remember sauce has a very important role.
How to prepare it?
At first use extra virgin olive oil, then choose herbs natural born in your region.
For example, when I am in Apulia I use Mediterranean scrub herbs and ginger, in Veneto I choose chives, garlic, seaweed and lime peel, in Tuscany use maritime pine needle.
In short, wherever you live. if you want to prepare a good sea sauce this is my advice:
choose herbs of your region
follow your own liking.

Apriti vongola. Open up clam.



Se volete mangiare frutti di mare io vi consiglio di aprire le conchiglie su fuoco diretto. Perché? Beh, perché così l'acqua che di solito esce dal frutto viene riassorbita dallo stesso e la polpa acquista più sapore.
Adesso vediamo se qualcuno capisce dove sta l'errore.

Arrosticini, una questione controversa. Arrosticini, a disputed question.



Gli arrosticini sono una specialità abruzzese ma conosciuti sul tutto territorio nazionale.
La domanda è: dove nascono?
Ed è proprio la risposta a creare scompiglio. La diatriba nasce tra accademia e racconti popolari.
Secondo un professore di linguistica dell'Università degli studi dell'Aquila il termine arrosticini deriva da una forma dialettale della provincia di Pescara. Secondo il professore gli arrosticini hanno origine proprio sulle sponde del fiume Pescara.
Ed è qui che nasce il contenzioso, secondo le storie tramandate i primi arrosticini sono stati "inventati" da un pastore. Si dice che questi, durante un pascolo sul Gran Sasso, non poteva cuocere grossi pezzi di pecora e pensò di tagliare la carne in pezzi molto piccoli e di infilzarli con un bastoncino di legno.
Ok, mentre voi litigate noi mangiamo.

Arrosticini are a speciality of Abruzzi, but they are well-known in the rest of Italy.
The question is: where were they born?
And the answer has caused havoc. Diatribe is between academitians and popular tales.
According to a professor of linguistics of University of L'Aquila, the word "arrosticini" come into being from Pescara dialect. He tells arrostini were born near Pescara riverbanks. That's the disagreement.
According to popular tales, a shepherd invented" arrosticini. As he was pasturing his flock at Gran Sasso Mountain he couldn't cook big pieces of lamb therefore cut lamb in very small pieces and plunged them with a wooden stick.

Salsiccia a punta di coltello. Pork sausage "a punta di coltello"



Oggi voglio parlarvi di una specialità tipica pugliese, precisamente dell'Alta Murgia, la salsiccia a punta di coltello. Questo tipo di salsiccia si chiama così proprio perché la carne magra di maiale viene tagliata a mano con il coltello e non con il tritacarne. Il risultato è una salsiccia molto saporita ma non solo per il taglio.
Le carne viene mischiata con lardo di maiale, semi di finocchio selvatico, peperoncino forte o dolce, sale marino e vino bianco.
Ovviamente la cottura consigliata è al barbecue, mantiene tutti sapori e i profumi della tradizione meridionale.

Today I wanna talk to you about an Apulian speciality, to be more precise a product from Alta Murgia, pork sausage "a punta di coltello" (literal translation " by point of knife"). This kind of sausage is called like this because light meat is cut by hand (remember that in your hand there's the knife). The result is a very tasty sausage and not only for the way of cutting.
Meat is mixed with lard, wild fennel seed, pepper (sweet or hot), salt and white wine.
Obviously, the bets way to cook it is BBQ, it keeps all the italian southern tradition flavours.

Emulsione d'agrumi e zenzero . Citrus fruits and ginger sauce.



Cosa fare di una fiorentina di maiale una volta cotta? La risposta non è mangiarla subito, calma.
In ambiente culinario esistono delle cose chiamate salse o emulsioni, quindi se esistono ci sarà un motivo.
Indubbiamente la carne di maiale, se l'animale ha avuto una vita sana e felice, ha un sapore molte deciso ed è buona anche nature.
Però, se la condite con un'emulsione di agrumi e zenzero otterrete una vera esplosione di sapori.
Per fare questa emulsione servono: un'arancia, mezzo limone, olio e zenzero fresco.
Emulsionate il succo degli agrumi con l'olio, aggiungete per ultimo lo zenzero tagliato a lamelle e lasciate riposare per mezz'ora.

to prepare this sauce you need: one orange, half lemon, oil and fresh ginger.
Mix citrus juice with oil and finally add thin strips of ginger and wait for half an hour.
